APPLE SPICE SMOOTHIE
Time: Overnight soak, plus 15 – 20 minutes
Makes 2 cups
Satisfying in autumn, winter, spring
Purifying, Health Building, and Vegetarian
2 Tablespoons almonds, soaked in 1 cup warm water and ½ teaspoon mineral salt
2 apples
Thin slice of ginger (skip for Pitta)
½ cup water or apricot juice
1 Tablespoon lemon or lime juice
¼ teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon organic lemon zest
1 date (optional)
½ – ¾ cup unsweetened organic almond milk or water
Ground nutmeg as garnish (optional)
Soak almonds, water and mineral salt overnight. Drain, discard the water. Peel nuts.
Wash and thin slice the apples (no need to peel). Simmer the apples, ginger, water or juice, and spices in a medium saucepan until the apples are tender, about 10 minutes. Add the soaked almonds, date and almond milk to the pot of apples. Stir to mix. With a handheld blender or any kind of food processor you have, blend until smooth. Serve at room temperature or warm, whichever is more appealing for you.
Effects: calms Pitta and Kapha, neutral for Vata.
Supports: plasma and hydration, laxative.
