Polarity Nutrition Recipe: Grilled Harvest Veggie Open Face Sandwich With Mushroom Tahini Pate

This quirky entrée is fun and delicious. Our household has gotten hooked on its interesting textures and unusual blend of flavors. It’s easy to make and full of fiber. Because it uses heated oils, it is best used in Polarity Gourmet Veggie food choices.

GRILLED HARVEST VEGGIE OPEN FACE SANDWICH
WITH MUSHROOM TAHINI PATE

Time: 30 minutes or less
Makes 2 – 4
Gourmet Vegetarian

4 thin (1/4”) slices of large turnip, large enough for each to cover a slice of bread
1 Tablespoon extra virgin olive oil

3 mushrooms, cubed in ¼” chunks
3 green onions, thin sliced
¼ cup raw sesame tahini
1 level Tablespoon miso
1/4 teaspoon dried marjoram (optional)
½ teaspoon dried thyme
A drizzle of water (1 Tablespoon)

4 slices bread of your choice. We choose gluten-free buckwheat millet sourdough from Wild Leaven Bakery here in Santa Fe, NM

Fresh greens/arugula for topping

Warm a large iron skillet; add the olive oil. When warm, put the 4 slices of turnip single layer in the pan, cover and cook over medium heat until golden brown around the edges, about 5-10 minutes. Flip and do the same with the second side, until the turnip is tender and crispy; you can easily pierce it with a fork. 

Put the mushrooms and onions in the same pan with the turnips and let them cook until tender, 2 -3 minutes.

While they are sautéing, measure the tahini, miso, and herbs into a bowl and mash them together with a fork into a pate. Mash in the sautéed mushrooms and green onions. To make the pate a little thinner and fluffier, drizzle a bit of water into the mix and whip it a bit with the fork, to an easily spreadable texture.

Take the turnips out of the pan; stack them on a plate. Put the bread in to toast in the same pan. Turn.

Assemble sandwich: put 1 slice warm toast on a plate, add the turnip as the base layer. Spread ¼ of the pate over the turnip, top with fresh greens. Repeat for each of the sandwiches. Figure 1 – 2 sandwiches per person, depending on their appetite. Serve warm.

Effects: tridoshic, especially friendly for earth, water, and fire types.

This meal supports: a hungry appetite, the yearning for a nourishing sandwich. Turnips support the lungs.

Adaptations: If you use smaller turnips prepared the same way, then stuffed with the same mushroom tahini pate, it makes a fun plant-based appetizer. The braised turnips look surprisingly like elegant mushrooms.
